BEST Turkey Chili Con Carne
2 lb of Lean Ground Turkey (I used Jenni-O)
1 smoked pork neck bone
1 lb Dried Pinto Beans
1 6oz can tomato paste
1 large onion
1 ear of corn, (kernels cut off)
1 teaspoon of sugar
1 teaspoon minced garlic
1 1/2 teaspoons ground cumin
1 teaspoon Durkee Grill Creations Steak Dust
1 teaspoon Hungarian Hot Paprika
1 teaspoon Garlic Virgin Olive Oil to finish
Add rinsed, dried beans to a large dutch oven with the smoked pork neck bone and cover with water. Bring to a boil and shut off. Let the beans and pork stand for 1 hour. After the hour is up, resume cooking. Saute onion in teaspoon of olive oil and add to the beans along with the 6oz can of tomato paste and 1 teaspoon of garlic, cumin, steak dust and hot paprika. Brown ground turkey in olive oil with a sprinkle of steak dust, cumin, paprika and garlic. Add to the pot.
Add fresh cut corn off the cob and garlic virgin olive oil to finish and serve with grated cheddar cheese on top. This is SO delicious that you will not even miss the meat in this dish. Just season the turkey well and allow it enough time to absorb the chili's robust, smokey flavors. Adjust the heat by adding more or less hot paprika.
